I must be dreaming. Is it really
Wednesday, and am I really, finally posting a WIAW entry? Go figure, I did forget to take pictures this week, but because I have my
pictures from last week, we’re all set. So without further adieu, I give you
Floptimism’s first What I Ate Wednesday (Er, Tuesday, But I’m Posting About It
Wednesday) Post.
I woke up and ate a banana and a peanut
butter Kashi bar by candlelight. I normally start my day with yogurt, but with
the power being out, I had to get creative.
A mid-morning snack consisting of
dried prunes and my favorite kind of almonds (packed in my handy-dandy
single-serving almond container).
Lunch almost went by
unphotographed, but at the last minute I remembered! Leftover Judi’s
Chicken, roasted broccoli and cauliflower, and sautéed spinach – a meal my
mom had managed to complete the night before just before our power cut out.
I had an afternoon snack of
freeze-dried apples with a touch of Crazy Richard’s Peanut Butter that I moved
from my powerless fridge to the employee fridge at the hospital in an attempt
to salvage a few cold items.
Dinner was a restaurant affair,
as we joined the many other people in the surrounding area without power trying
to find a warm meal and a little bit of light. We finally settled on a small
Mediterranean place, and I ordered a delicious vegan split pea soup followed
by…
…a sampler appetizer platter full
of falafel, hummus, baba ghanoush, Israeli salad, and a tabbouleh. It was
exactly what I was looking for – sometimes I just crave a big plate of
vegetables – and they did it really well.
Just 15 minutes after we finished
dinner, our power thankfully came back on, and it was back to my usual food
routine. Maybe next week I’ll have a more normal day to share with you!
