Welcome to another WIAW! Lest my
blog turn into an alternating bombardment of Simple Saturdays & What I Ate
Wednesdays, I figured I’d do an every-other-week sort of thing. You can’t
possibly care that much about what
silly little me puts into my mouth that you want to see a WIAW every single
week, right? You most certainly care more about things like how I turned
elegant chocolate
peppermint cake slices into gluttonous, semi-liquid, transcendental goo,
and what happened when I took leftover eggnog, white chocolate peppermint
m&ms, and flour and tried to succeeded in making a
totally awesome cake, right?
If that is, in fact, all you care about and you think I
should do away with these little bi-monthly food diaries, don’t hesitate to say
so. I’ll shut my trap, put away my camera phone (no matter how much I love love
love it), and continue on with the real recipes.

But let’s begin! Breakfast was
some plain non-fat Chobani with a very lovely homemade cherry-orange topping
(recipe to come).
After rounds, I snuck back to the
office and ate a banana smeared with some cinnamon-PB (I just mixed some
cinnamon into peanut butter, nothing fancy).
Lunch was a pretty standard
combination on my part: mixed greens, carrots, broccoli, sliced almonds, and
hummus. I also sprinkled nutritional yeast on top and had a few whole grain crackers on the side.
Before I left the hospital for
the day, I snuck in my afternoon snack – a chocolate Kashi bar full of yummy
things like sweet potatoes and black beans. I also had a small handful of
PB-filled pretzels that another dietitian had brought into the office.
By the time dinner rolled around,
I was definitely hungry again! We ate
late, which is usually the case when I go to L’s for dinner, so between that
and a pretty intense workout when I got home from the internship, I was more
than excited about these Kasha & Portobello veggie burgers. Originally I
was going to have an open-faced sandwich with whole wheat bread, but then I
found out there were also arapas, or
corn cakes, so I swapped the bread out for one of those. Topped off with a
little mango habanero hot sauce with a nice little salad on the side, it
was an excellent meal.
